We use Senza Glutine pizza shells for our crust, which are vegan friendly and dairy, egg, and soy free.

Regarding preparation and cross-contamination
We have been serving celiacs for several years now and are aware of the sensitivity of contact with any type of other flour. We do not cross-contaminate, and all our our crust are stored separately. Our pizzaiolos pre-sanitize any work area and wear gloves when preparing and handling gluten-free crust.
Additionally the crusts are cooked with a dedicated screen that does not come in contact with the cooking surface of the wood-fired oven.
